(New York, NY – December, 16, 2014) – Whole Foods Market has partnered with Crown Finish Caves, to bring a new, locally produced and aged cheese to the retailer’s eight New York City locations. The finished product is a washed rind, raw cow’s milk cheese, produced by Chaseholm Farm Creamery, located in Pine Plains, the heart of New York’s Hudson Valley. The cheese has been aged for more than 60 days at Crown Finish Caves, a unique and first-of-its-kind cheese aging facility located in a renovated and repurposed 1850’s lagering tunnel 30 feet below the street in Crown Heights, Brooklyn.

Aptly named, “Crown Dutchess,” this cheese is pungent and imparts the sweet flavors of fall. Notes of almonds, sweet pink apple, and a hint of saltiness are found in the paste, balanced by dry leaf tones at the rind.  Crown Dutchess can be paired with a barley wine ale or a scotch ale. The product will retail for $6.25 for a ¼ lb.
